A delightful Mint Chocolate Cake that combines rich chocolate flavor with a refreshing mint twist, perfect for all occasions.

  • 1 3/4 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda

  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons pure vanilla extract
  • 1 cup boiling water
  • 1/2 teaspoon peppermint extract
  • 2 cups unsalted butter, softened
  • 4 cups powdered sugar
  • 2 tablespoons heavy cream
  • 1/2 teaspoon peppermint extract
  • 1 cup mint chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. Combine in a large bowl the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, milk, oil, and vanilla extract, mixing until well combined.
  4. Gradually stir in the boiling water until the batter is smooth.
  5. Divide the batter evenly into the prepared pans and bake for 30-35 minutes or until a toothpick comes out clean.
  6. Allow the cakes to cool completely.
  7. Beat the softened butter in a bowl until creamy for the mint chip buttercream.
  8. Gradually add the powdered sugar, then mix in the heavy cream and peppermint extract until fluffy.
  9. Layer the cooled cakes with buttercream filling and cover the entire cake with the remaining buttercream.
  10. Finish by sprinkling mint chocolate chips on top. Enjoy!

Notes

For a more pronounced mint flavor, consider adding finely chopped fresh mint leaves to the buttercream. Always let cakes cool completely before frosting to maintain the integrity of the buttercream.
