Delicious gluten-free mint brownies with a rich chocolate base and refreshing mint filling, perfect for sharing and enjoying on special occasions.

  • 1 cup unsalted butter (226 grams)
  • 4 oz semi-sweet chocolate (112 grams)
  • 2 cups white sugar (400 grams)
  • 4 large eggs (room temperature)
  • 1/4 cup cocoa powder (22 grams)
  • 1 cup all-purpose gluten-free flour (125 grams)
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter (112 grams, softened)
  • 2-4 drops green food coloring
  • 1 1/2 teaspoons peppermint extract (to taste)
  • 1/4 teaspoon salt
  • 2 – 2 1/2 cups powdered sugar (220 – 275 grams)
  • 1-2 tablespoons heavy cream (or milk, as needed)
  • 6 oz semi-sweet chocolate (about 3/4 cup chocolate chips)
  • 1/2 cup unsalted butter (112 grams)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9×13-inch baking pan and line it with parchment paper.
  3. Melt 1 cup of unsalted butter and 4 oz of semi-sweet chocolate in a large saucepan over low heat.
  4. Stir until smooth and let it cool slightly.
  5. Mix in 2 cups of white sugar until combined.
  6. Add 4 large eggs one at a time, mixing well after each addition.
  7. Whisk in 1/4 cup cocoa powder, 1 cup all-purpose gluten-free flour, and 1/2 teaspoon salt until just combined.
  8. Pour the batter into the prepared pan and bake for 20-25 minutes, or until a toothpick comes out with a few moist crumbs.
  9. For the mint filling, beat 1/2 cup softened unsalted butter with 2-4 drops of green food coloring and 1 1/2 teaspoons peppermint extract.
  10. Add 2-2 1/2 cups powdered sugar and 1/4 teaspoon salt.
  11. Mix in 1-2 tablespoons of heavy cream until fluffy and spreadable.
  12. Spread the mint filling over the cooled brownies.
  13. Melt 6 oz of semi-sweet chocolate and 1/2 cup unsalted butter until smooth.
  14. Pour the chocolate topping over the mint layer and spread evenly.
  15. Chill in the fridge for at least 30 minutes before cutting into squares.
