Delightful bite-sized pastries filled with smooth pastry cream and topped with fresh fruit, perfect for any occasion.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup powdered sugar
  • 1/4 teaspoon salt
  • 1 egg yolk
  • 1/2 cup milk
  • 1 tablespoon cornstarch
  • 1/2 teaspoon vanilla extract
  • 1 cup fresh strawberries, sliced
  • 1 cup fresh blueberries

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the flour, powdered sugar, and salt in a bowl.
  3. Add the softened butter and egg yolk, and mix until the dough comes together.
  4. Press the dough into mini tart pans.
  5. Chill for 30 minutes.
  6. Bake the tart shells for about 10-12 minutes until golden.
  7. Let them cool.
  8. Heat the milk in a saucepan until warm.
  9. Mix cornstarch and a little milk in a separate bowl to form a paste.
  10. Add the paste to the warm milk and stir until thickened.
  11. Remove from heat and stir in vanilla.
  12. Fill the cooled tart shells with pastry cream.
  13. Top with freshly sliced strawberries and blueberries.
  14. Serve chilled and enjoy your Mini Fruit Tarts!
