A creamy, gluten-free dip inspired by the flavors of traditional Mexican street corn, perfect for sharing at any gathering.

Ingredients

  • 1 tablespoon oil
  • 3 cups corn (grilled, canned, or frozen)
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 4 ounces cream cheese, softened
  • 1/2 cup cotija cheese, crumbled
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 tablespoon lime juice
  • 1 jalapeño, minced
  • 2 tablespoons chopped green onion or chives
  • 1/4 teaspoon paprika (optional)
  • Extra cotija, chives, and jalapeño slices for garnish

Instructions

  1. Heat oil in a skillet over medium-high heat.
  2. Add corn and sauté until lightly charred, about 6–8 minutes.
  3. Whisk together mayonnaise, sour cream, and softened cream cheese in a large bowl until smooth.
  4. Stir in charred corn, cotija cheese, jalapeño, garlic powder, chili powder, and lime juice. Mix well.
  5. Transfer dip to a serving bowl. Top with extra cotija, paprika, chopped chives, and sliced jalapeño.
  6. Serve warm or at room temperature with chips, crackers, or veggie sticks.
