Mexican Pizza (Taco Bell Copycat)

A homemade version of the iconic Taco Bell Mexican Pizza, featuring crispy tortillas, seasoned beef, and gooey cheese.

Ingredients

  • 8 flour tortillas (or corn tortillas)
  • 1 lb ground beef
  • 2 tbsp taco seasoning
  • 1/4 cup water
  • 4 tbsp enchilada sauce
  • 8 ounces refried beans (1/2 can)
  • 1 cup shredded cheese (cheddar, mozzarella, or Mexican cheese blend)
  • 1 tomato (roma or beefsteak, seeds removed and diced)
  • 1 small red onion (diced)
  • 1/4 cup black olives, sliced
  • 1/4 cup sour cream
  • 2 green onions (finely diced)

Instructions

  1. Add a large frying pan or skillet on medium heat.
  2. Place the ground beef in the pan and break it up into small pieces as it cooks using a spatula or spoon. Cook for about 5-8 minutes or until the meat is cooked through.
  3. Remove grease from the pan.
  4. Stir in the taco seasoning, water, and enchilada sauce. Mix until evenly combined and let simmer for 1-2 minutes.
  5. Spread a layer of refried beans on one tortilla.
  6. Top with ground beef and a layer of cheese, then place another tortilla on top.
  7. Spread 1 tbsp of enchilada sauce on top of the tortilla and cover with more shredded cheese.
  8. Repeat with remaining tortillas to assemble all the pizzas.
  9. Preheat Air Fryer to 400°F and carefully place one pizza in the air fryer. Cook for about 5 minutes, or until the cheese melts and the tortillas are crispy.
  10. Alternatively, preheat oven to 350°F and line a sheet pan with tin foil or parchment paper. Arrange pizzas and bake for 8-10 minutes or until cheese is melted and tortillas are crispy.
  11. In a frying pan, add a splash of oil and cook one pizza at a time for 4-5 minutes with a lid until cheese melts and the bottom tortilla is crispy.
  12. Transfer cooked pizzas to a serving plate and top with optional garnishes (tomatoes, red onion, olives, sour cream, green onion) and enjoy!
