A hearty and comforting bowl of Mexican Beef Green Chili filled with tender beef, vibrant green chiles, and robust spices.

Ingredients

  • 2 pounds beef chuck, cut into chunks
  • 2 cups green chiles, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat a large pot or slow cooker over medium heat and add the olive oil.
  2. Brown the beef chunks on all sides.
  3. Add the onion and garlic, and sauté until softened.
  4. Stir in the green chiles, beef broth, cumin, oregano, salt, and pepper.
  5. Bring to a boil, then reduce the heat to low and simmer for at least 90 to 120 minutes, or until the beef is tender. If using a slow cooker, set on low for 360 to 480 minutes.
  6. Serve hot in tacos, burrito bowls, or on its own.

Notes

Store leftover chili in an airtight container for up to 3 days, or freeze for up to 3 months.
