A vibrant mix of fresh veggies, creamy feta, and gluten-free pasta all tossed in a zesty vinaigrette, perfect for any gathering.

Ingredients

  • 8 oz gluten-free pasta (any shape)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup red onion, diced
  • 1/4 cup olives, sliced (optional)
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions.
  2. Drain and let cool.
  3. Combine in a large bowl the cherry tomatoes, cucumber, feta cheese, red onion, and olives (if using).
  4. Whisk together in a small bowl olive oil, red wine vinegar, oregano, salt, and pepper.
  5. Add the cooled pasta to the vegetables and pour the vinaigrette over the salad.
  6. Toss everything together gently to combine.
  7. Serve immediately or refrigerate for an hour to let the flavors meld.
