A vibrant and refreshing pasta salad bursting with Mediterranean flavors, perfect for summer gatherings and gluten-free friendly.

Ingredients

  • 8 ounces gluten-free pasta (penne or rotini)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, diced
  • 1 bell pepper, diced
  • 1 cup Kalamata olives, pitted and halved
  • 1 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the pasta according to package instructions. Drain and rinse under cold water to cool.
  2. Combine in a large bowl the cooked pasta, cherry tomatoes, cucumber, red onion, bell pepper, olives, and feta cheese.
  3. Whisk together in a small bowl the olive oil, red wine vinegar, oregano, salt, and pepper.
  4. Pour the dressing over the pasta salad and toss to combine.
  5. Chill in the fridge for at least 30 minutes before serving.
  6. Garnish with fresh parsley before serving.
