A refreshing salad featuring protein-packed chickpeas, vibrant vegetables, and crumbly feta cheese, all tossed in a bright lemon-olive oil dressing.

Ingredients

  • 2 cans Chickpeas (15-ounce cans, drained and rinsed)
  • 0.5 cup Red Onion (finely chopped)
  • 1 cup Cherry Tomatoes (halved)
  • 1 Cucumber (peeled, seeded, and diced)
  • 0.5 cup Kalamata Olives (pitted and halved)
  • 4 ounces Feta Cheese (crumbled)
  • 0.25 cup Fresh Parsley (chopped)
  • 0.25 cup Fresh Mint (chopped)
  • 0.25 cup Olive Oil (extra virgin preferred)
  • 3 tablespoons Lemon Juice (freshly squeezed)
  • 1 clove Garlic (minced)
  • 0.5 teaspoon Dried Oregano
  • Salt and Black Pepper (to taste)

Instructions

  1. Drain the chickpeas and rinse them under cold water.
  2. Chop the red onion finely.
  3. Halve the cherry tomatoes.
  4. Peel, seed, and dice the cucumber.
  5. Pit the Kalamata olives and halve them.
  6. Crumble the feta cheese into small pieces.
  7. Chop the fresh parsley and mint.
  8. Combine the chickpeas, red onion, cherry tomatoes, cucumber, Kalamata olives, feta cheese, parsley, and mint in a large bowl.
  9. Whisk together the olive oil, lemon juice, minced garlic, and dried oregano in a small bowl.
  10. Pour the dressing over the salad and toss gently to combine all the ingredients.
  11. Season with salt and black pepper to taste.
