  • 2 cups cooked rice
  • 2 chicken breasts, grilled and sliced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1 cup kalamata olives, pitted
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the rice according to package instructions.
  2. Combine the cherry tomatoes, cucumber, red onion, and olives in a bowl.
  3. Whisk together olive oil, lemon juice, oregano, salt, and pepper in a small bowl.
  4. Toss the vegetable mixture with the dressing until well-coated.
  5. Assemble the bowls by placing a scoop of rice on one side.
  6. Add the sliced grilled chicken on top of the rice.
  7. Top with the vegetable mix.
  8. Finish with crumbled feta cheese on top.
