  • 2 cups gluten-free couscous
  • 1 lb chicken breast, diced
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon turmeric
  • Salt and pepper to taste
  • 1 cup chicken broth
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the onion and garlic; sauté until translucent.
  3. Add the diced chicken; cook until browned.
  4. Stir in the red bell pepper, zucchini, cumin, paprika, turmeric, salt, and pepper.
  5. Pour in the chicken broth; bring to a simmer and let cook for about 10 minutes.
  6. Meanwhile, prepare the couscous according to package instructions.
