  • 1 cup cherry tomatoes, halved

  • 1/2 red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 2 cups mixed greens
  • Lemon wedges for serving

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken breasts with garlic powder, oregano, salt, and pepper.
  3. Cook chicken for about 6-7 minutes on each side or until cooked through. Remove from heat and let rest for a few minutes, then slice.
  4. Combine cooked rice, cherry tomatoes, cucumber, red onion, and mixed greens in a large bowl.
  5. Top the vegetable and rice mixture with sliced chicken and feta cheese.
  6. Serve with lemon wedges on the side.
