A comforting, gluten-free soup made with fresh cauliflower, onions, and garlic, perfect for chilly evenings.

Ingredients

  • 1 head cauliflower, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 2 celery stalks, diced
  • 4 cups vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Olive oil for cooking
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, carrot, and celery. Sauté until softened.
  3. Add the chopped cauliflower, vegetable broth, oregano, cumin, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for about 20 minutes until the cauliflower is tender.
  5. Use an immersion blender to purée the soup until smooth.
  6. Serve hot, garnished with fresh parsley.
