  • 2 medium butternut squash, peeled and cubed
  • 1/2 cup goat cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the cubed butternut squash on a baking sheet and drizzle with olive oil. Season with salt and pepper.
  3. Roast in the oven for 25-30 minutes, or until tender.
  4. Transfer the roasted squash to a mixing bowl and mash until smooth.
