2 medium butternut squash, peeled and cubed
1/2 cup goat cheese, crumbled
2 tablespoons olive oil
1 tablespoon fresh rosemary, chopped
Salt and pepper to taste
Instructions
Preheat the oven to 400°F (200°C).
Place the cubed butternut squash on a baking sheet and drizzle with olive oil. Season with salt and pepper.
Roast in the oven for 25-30 minutes, or until tender.
Transfer the roasted squash to a mixing bowl and mash until smooth.
Stir in the goat cheese and chopped rosemary until well combined.
Adjust seasoning if necessary and serve warm.
