A comforting pasta dish featuring succulent chicken in a creamy garlic and sun-dried tomato sauce.

Ingredients

  • 1 lb Boneless skinless chicken breasts
  • 8 oz Pasta (penne, fettuccine, or rigatoni)
  • 1 cup Heavy cream
  • 0.5 cup Chicken broth
  • 0.75 cup Freshly grated parmesan cheese
  • 0.5 cup Sun-dried tomatoes (julienned)
  • 4 cloves Garlic (minced)
  • 2 tbsp Olive oil
  • 1 tsp Italian seasoning
  • 0.5 tsp Red pepper flakes
  • Salt (to taste)
  • Freshly ground black pepper (to taste)
  • 2 tbsp Butter
  • Baby spinach (for stirring in)
  • Fresh basil (for garnish)
  • Parmesan shavings or toasted pine nuts (for garnish)
  • Crusty bread (for serving)

Instructions

  1. Cut chicken breasts into bite-sized pieces and season with salt and pepper.
  2. Sear chicken in a skillet until golden brown.
  3. Melt butter in the same skillet, add garlic and cook briefly, then add sun-dried tomatoes.
  4. Simmer chicken in the creamy sauce prepared with heavy cream and broth.
  5. Cook pasta in salted water and reserve some pasta water before draining.
  6. Combine the creamy sauce, chicken, and pasta in the skillet.
  7. Serve hot, garnished with basil and accompanied by crusty bread.

Notes

Great for cozy dinners and celebrations. Can be made vegetarian by substituting chicken with mushrooms and vegetable broth.
