  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup mango purée

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Combine graham cracker crumbs, 1/3 cup sugar, and melted butter in a bowl.
  3. Press mixture into the bottom of a greased 9×9 inch baking dish.
  4. Beat the cream cheese and 1 cup sugar in a large bowl until smooth.
  5. Add eggs one at a time, mixing well after each addition.
  6. Stir in vanilla extract.
  7. Pour the cream cheese mixture over the crust.
  8. Swirl in mango purée with a knife for a marbled effect.
  9. Bake for 45-50 minutes, or until the center is set.
  10. Allow to cool, then refrigerate for at least 2 hours before cutting into bars.
