A delicious and satisfying low-carb casserole that combines the flavors of a classic bacon cheeseburger.

Ingredients

  • 1 lb ground beef
  • 6 slices of bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced onion
  • 1/2 cup diced pickles
  • 4 large eggs
  • 1/2 cup heavy cream
  • 1 tsp garlic powder
  • 1 tsp mustard
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the ground beef and onion over medium heat until the beef is browned.
  3. In a large bowl, combine the cooked beef, crumbled bacon, pickles, garlic powder, mustard, salt, and pepper.
  4. In another bowl, whisk together the eggs and heavy cream.
  5. Pour the egg mixture over the beef mixture and stir to combine.
  6. Transfer the mixture to a greased baking dish and top with shredded cheddar cheese.
  7. Bake for 25-30 minutes or until the casserole is set and the cheese is bubbly.
  8. Let it cool for a few minutes before serving.
