A delicious and customizable potato bowl filled with crispy potatoes, savory meat or beans, and fresh toppings, inspired by Mexican cuisine.

Ingredients

  • 4 medium russet potatoes, diced
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • ½ tsp ground cumin
  • Salt & pepper to taste
  • 1 lb ground beef or black beans
  • 1 packet taco seasoning (or homemade)
  • 1 cup shredded cheddar or Mexican blend cheese
  • ½ cup sour cream or Greek yogurt
  • ½ cup salsa
  • ¼ cup sliced green onions
  • ¼ cup chopped cilantro
  • Optional: diced tomatoes, corn, jalapeños, olives

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Toss diced potatoes with olive oil and seasonings.
  3. Spread on a baking sheet and roast for 25–30 minutes, flipping halfway, until crispy.
  4. Brown beef in a skillet.
  5. Add taco seasoning and water; simmer until thickened.
  6. Remove potatoes from oven, transfer to bowls, and sprinkle cheese while hot.
  7. Top with seasoned meat or beans, then layer on desired toppings.
  8. Finish with sour cream, salsa, and chopped cilantro.

Notes

Store in an airtight container in the fridge for up to 3 days, or freeze the meat or beans separately from the potatoes for up to 2 months.
