Little Debbie Brownies

Decadent and fudgy brownies inspired by the beloved Little Debbie snack cakes, perfect for any chocolate lover.

Ingredients

  • 1 cup gluten-free all purpose flour
  • 1/2 teaspoon xanthan gum (omit if your blend already contains it)
  • 3/4 cup unsweetened cocoa powder
  • 1/8 teaspoon kosher salt
  • 3/4 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 8 tablespoons unsalted butter (at room temperature)
  • 2 tablespoons neutral oil
  • 2 teaspoons pure vanilla extract
  • 2 tablespoons light corn syrup
  • 2 large eggs (at room temperature, beaten)
  • 8 ounces semi-sweet chocolate (chopped)
  • 2/3 cup heavy whipping cream
  • 3 ounces miniature M&Ms or multicolored Sixlets (for decorating, optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking pan or line it with parchment paper.
  2. In a bowl, whisk together the gluten-free flour, xanthan gum (if using), cocoa powder, and kosher salt.
  3. In a separate bowl, cream together the unsalted butter, granulated sugar, and light brown sugar until smooth.
  4. Add the neutral oil, vanilla extract, and light corn syrup to the butter-sugar mixture, stirring until well combined.
  5. Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next.
  6. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  7. Fold in the chopped semi-sweet chocolate until evenly distributed.
  8. Spread the batter into the prepared baking pan and smooth the top.
  9. Bake for about 25-30 minutes or until a toothpick inserted in the center comes out with a few moist crumbs.
  10. Let cool completely in the pan before frosting.
  11. In a saucepan, heat the heavy whipping cream over medium heat until it just begins to simmer. Remove from heat and add the remaining chopped chocolate, stirring until melted and smooth.
  12. Pour the chocolate ganache over the brownies, spreading it evenly. Sprinkle with M&Ms or Sixlets if desired.

Notes

Store leftovers in an airtight container at room temperature for up to 3 days, or refrigerate for longer storage.
