A refreshing twist on the classic Italian dessert, this gluten-free Lemon Tiramisu combines creamy mascarpone with zesty lemon for a delightful experience.

Ingredients

  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1/2 cup lemon juice
  • 1 tablespoon lemon zest
  • 1 package gluten-free ladyfinger cookies
  • 1/2 cup strong brewed coffee (cooled)
  • 1/4 cup lemon-flavored liqueur (optional)
  • Fresh mint leaves for garnish

Instructions

  1. Whisk together the mascarpone cheese, heavy cream, powdered sugar, lemon juice, and lemon zest until smooth and creamy.
  2. Combine the cooled coffee and lemon liqueur in a shallow dish.
  3. Quickly dip each ladyfinger into the coffee mixture, making sure not to soak them.
  4. Layer the dipped ladyfingers in the bottom of a serving dish.
  5. Spread half of the lemon mascarpone mixture over the ladyfingers.
  6. Repeat the layers with the remaining ladyfingers and lemon mixture.
  7. Cover and refrigerate for at least 240 minutes, or overnight for best results.
  8. Garnish with fresh mint leaves before serving.
