Delightful gluten-free Lemon Snickerdoodles that combine the comforting flavors of traditional snickerdoodles with a bright, refreshing lemon twist.

  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1/4 cup powdered sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix together the flour, baking soda, baking powder, salt, and cinnamon.
  3. In another bowl, cream together the softened butter, granulated sugar, and powdered sugar until fluffy.
  4. Beat in the egg, vanilla extract, lemon zest, and lemon juice until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Roll the dough into balls and coat them with cinnamon sugar.
  7. Place the dough balls on a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes, or until the edges are lightly golden.
  9. Allow to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
