Delightful gluten-free pastries filled with cream cheese, fresh raspberries, and a hint of lemon, perfect for breakfast or special occasions.

  • 1 package of gluten-free puff pastry
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/2 cup fresh raspberries
  • 1 tablespoon lemon juice
  • Zest of 1 lemon
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon all-purpose flour (for dusting)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Roll out the puff pastry on a floured surface and cut it into squares.
  3. Mix the softened cream cheese, powdered sugar, lemon juice, and lemon zest in a bowl until smooth.
  4. Place a spoonful of the cream cheese mixture and a few raspberries in the center of each pastry square.
  5. Fold the corners of the pastry over the filling to form a pocket and brush with beaten egg.
  6. Bake in the preheated oven for 20-25 minutes or until golden brown.
  7. Allow to cool slightly before serving.
