  • 1 cup Pecorino Romano cheese, grated
  • 1 cup gluten-free breadcrumbs
  • 2 lemons (zest and juice)
  • 1/2 cup gluten-free flour
  • 2 eggs, beaten
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/2 cup heavy cream
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Mix breadcrumbs, Pecorino cheese, lemon zest, salt, and pepper in a shallow dish.
  3. Dredge each chicken breast in flour.
  4. Dip in beaten eggs.
  5. Coat with the breadcrumb mixture.
  6. Heat olive oil in a skillet over medium-high heat.
