Delightful gluten-free Lemon Cream Puffs filled with zesty cream, perfect for any occasion.

Ingredients

  • 1 cup water
  • 1/2 cup unsalted butter
  • 1 cup gluten-free all-purpose flour
  • 1/4 teaspoon salt
  • 4 large eggs
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • Zest of 1 lemon
  • 1/4 cup fresh lemon juice
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine water and butter in a saucepan. Bring to a boil.
  3. Stir in flour and salt until the mixture forms a ball and pulls away from the sides of the pan.
  4. Remove from heat and let it cool for a few minutes.
  5. Beat in eggs one at a time until the mixture is smooth.
  6. Drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper.
  7. Bake for about 25-30 minutes until golden brown.
  8. Whip the heavy cream with powdered sugar, lemon zest, lemon juice, and vanilla extract until stiff peaks form while the puffs cool.
  9. Cut a slit in each puff and fill with lemon cream once they are cool.
  10. Serve immediately and enjoy!
