  • 2 cups cottage cheese (full-fat or low-fat, small-curd recommended)
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest (about 1 lemon)
  • 3 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Optional toppings: fresh berries (strawberries, blueberries, raspberries), extra lemon zest, crushed pistachios or almonds, light dusting of powdered sugar

Instructions

  1. Gather all ingredients and equipment.
  2. Wash and dry your lemon; measure out cottage cheese, honey, and vanilla.
  3. Zest the lemon using a microplane or fine grater, avoiding the bitter white pith.
  4. Juice the lemon and strain out seeds. Measure 2 tablespoons of juice.
  5. Add cottage cheese to a blender or food processor. Blend on high for 1-2 minutes until smooth and creamy.
  6. Add lemon juice, lemon zest, honey (or maple syrup), vanilla extract, and a pinch of salt. Blend again for 30-60 seconds until glossy.
  7. Taste and adjust: add more zest or honey if desired. Blend a final time.
  8. Pour pudding into serving bowls or glasses. Chill in the fridge for 30 minutes for best texture.
  9. Serve cold, topped with fresh berries or nuts as desired.
