- 9 lasagna noodles
- 2 cups ricotta cheese
- 1 cup grated Parmesan cheese
- 2 cups shredded mozzarella cheese
- 1 zucchini, sliced
- 1 bell pepper, chopped
- 1 cup spinach, chopped
- 1 cup mushrooms, sliced
- 2 cups marinara sauce
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions; drain and set aside.
- In a bowl, mix ricotta cheese, Parmesan cheese, oregano, basil, salt, and pepper.
- In a baking dish, spread a layer of marinara sauce on the bottom.
- Layer 3 lasagna noodles over the sauce, followed by half of the ricotta mixture, half of the vegetables, and a third of the mozzarella cheese.
- Repeat the layers: sauce, noodles, ricotta mixture, vegetables, and mozzarella.
- Top with remaining noodles, sauce, and mozzarella cheese.
- Cover with foil and bake for 25 minutes.
- Remove foil and bake for an additional 15 minutes until cheese is bubbly and golden.
- Let it cool for 10 minutes before serving.
