A delicious and flavorful lasagna packed with Mediterranean vegetables and creamy ricotta cheese.

  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 1 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese
  • 1 zucchini, sliced
  • 1 bell pepper, chopped
  • 1 cup spinach, chopped
  • 1 cup mushrooms, sliced
  • 2 cups marinara sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions; drain and set aside.
  3. In a bowl, mix ricotta cheese, Parmesan cheese, oregano, basil, salt, and pepper.
  4. In a baking dish, spread a layer of marinara sauce on the bottom.
  5. Layer 3 lasagna noodles over the sauce, followed by half of the ricotta mixture, half of the vegetables, and a third of the mozzarella cheese.
  6. Repeat the layers: sauce, noodles, ricotta mixture, vegetables, and mozzarella.
  7. Top with remaining noodles, sauce, and mozzarella cheese.
  8. Cover with foil and bake for 25 minutes.
  9. Remove foil and bake for an additional 15 minutes until cheese is bubbly and golden.
  10. Let it cool for 10 minutes before serving.

Notes

  • Feel free to add or substitute any vegetables you prefer.
  • For a gluten-free version, use gluten-free lasagna noodles.
  • This dish can be made ahead of time and stored in the refrigerator before baking.
