A delightful gluten-free quick bread infused with the refreshing tang of key lime.

Ingredients

  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup sour cream
  • 1/4 cup key lime juice
  • Zest of 2 key limes
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Mix the flour, baking soda, and salt together in a bowl.
  3. Cream together the sugar and butter in a separate bowl until light and fluffy.
  4. Beat in the eggs one at a time.
  5. Mix in sour cream, lime juice, lime zest, and vanilla extract.
  6. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
