These Key Lime Pie Bars offer a refreshing twist on the classic dessert, combining the tangy taste of key limes with a creamy filling and crisp graham cracker crust.

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 2 cups sweetened condensed milk
  • 1/2 cup fresh lime juice
  • Zest of 2 limes
  • 4 large egg yolks
  • Whipped cream for topping (optional)
  • Lime slices for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix together the graham cracker crumbs, melted butter, and granulated sugar in a bowl.
  3. Press the mixture into the bottom of a greased 9×13 inch pan to form the crust.
  4. Whisk together the sweetened condensed milk, fresh lime juice, lime zest, and egg yolks in another bowl until well combined.
  5. Pour the lime filling over the crust in the pan.
  6. Bake for 15-20 minutes or until the filling is set.
  7. Allow to cool completely, then refrigerate for at least 2 hours before serving.
  8. Cut into bars and top with whipped cream and lime slices if desired.

Notes

For a sugar-free option, consider using Stevia, Monk fruit, or Allulose as sugar substitutes. Ensure the bars are well-chilled for a firmer texture before serving.
