  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine almond butter, cocoa powder, erythritol, egg, vanilla extract, baking soda, and salt.
  3. Mix until well combined and a dough forms.
  4. Using a spoon or cookie scoop, drop dough onto the prepared baking sheet, spacing them about 2 inches apart.
  5. Bake for 10-12 minutes, or until the edges are set.
  6. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
