  • 1 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/4 teaspoon salt
  • Peach or apricot preserves
  • Yellow and red food coloring
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the butter and sugar in a large bowl until light and fluffy.
  3. Beat in the egg, vanilla extract, and almond extract.
  4. Whisk together the flour, baking powder, and salt in a separate bowl.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until well combined.
  6. Roll the dough into small balls and place them on a baking sheet.
  7. Use your finger or a spoon to create a small indentation in the center of each ball.
  8. Bake for 15-20 minutes or until lightly golden.
  9. Allow cookies to cool.
  10. Fill the indentations with peach or apricot preserves.
  11. Color the leftover dough with food coloring and form small peach shapes, then place them on top of the filled cookies.
  12. Dust with powdered sugar before serving.
