  • 1/4 cup olive oil
  • 1/4 cup chicken broth
  • 1 tbsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp dried thyme
  • 1/2 tsp crushed red pepper flakes (optional)
  • 1/4 cup grated Parmesan cheese (for serving)
  • Chopped fresh parsley (for garnish)

Instructions

  1. Place chicken breasts in the crockpot and add potatoes, onion, and garlic.
  2. Whisk together olive oil, chicken broth, Italian seasoning, salt, pepper, paprika, thyme, and red pepper flakes; pour over chicken and potatoes.
  3. Cover and cook on low for 6-7 hours or high for 3-4 hours until chicken is cooked and potatoes are tender.
  4. Sprinkle with Parmesan cheese and parsley before serving.
