Deliciously tangy and sweet lemon bars that are completely gluten-free.

Ingredients

  • 1 cup almond flour
  • 1/4 cup coconut oil, melted
  • 1/4 cup honey or maple syrup
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/4 cup coconut sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
  2. In a bowl, mix almond flour, melted coconut oil, honey, and salt until combined.
  3. Press the mixture into the bottom of the prepared baking dish to form the crust.
  4. Bake the crust for 10-12 minutes until lightly golden.
  5. In another bowl, whisk together the eggs, lemon juice, lemon zest, and coconut sugar until smooth.
  6. Pour the lemon mixture over the baked crust.
  7. Bake for an additional 20-25 minutes until the filling is set.
  8. Allow to cool completely before slicing into bars.

Notes

  • For a sweeter taste, adjust the amount of honey or maple syrup.
  • Store leftovers in the refrigerator for up to a week.
  • These bars can be dusted with powdered sugar before serving for an extra touch.
