  • 1 cup shredded coconut
  • 1/2 cup cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Cinnamon (for coating)

Instructions

  1. Combine the softened cream cheese and unsalted butter in a mixing bowl until smooth.
  2. Add the powdered sugar, shredded coconut, vanilla extract, and salt to the mixture, and mix until well combined.
  3. Shape the mixture into small potato-shaped balls.
  4. Roll the balls in cinnamon to give them a ‘potato’ appearance.
  5. Place the shaped candies on a baking sheet and refrigerate until firm.
  6. Serve chilled or at room temperature.
