A delightful gluten-free Irish dessert combining moist apples and warm cinnamon, perfect for family gatherings or special occasions.

  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 2 cups peeled and diced apples
  • 1/2 cup raisins (optional)
  • Custard sauce (for serving, optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. Whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon in a large bowl.
  3. Cream the butter until light and fluffy in another bowl.
  4. Beat in the eggs one at a time, then mix in the vanilla and buttermilk.
  5. Gradually add the dry ingredients to the wet mixture until just combined.
  6. Fold in the diced apples and raisins if using.
  7. Pour the batter into the prepared cake pan and smooth the top.
  8. Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
  9. Let cool in the pan for 10 minutes, then remove from the pan and cool completely on a wire rack.
  10. Serve warm or at room temperature, with or without custard sauce.
