A comforting gluten-free dessert featuring custard-soaked bread and plump raisins, drizzled with a silky whiskey sauce.

  • 8 cups day-old gluten-free bread, cubed
  • 4 cups milk
  • 4 large eggs
  • 1 cup sugar
  • 1/2 cup raisins
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 cup butter, melted
  • 1 cup whiskey (optional, for sauce)
  • 1 cup sugar (for whiskey sauce)
  • 1 cup cream (for whiskey sauce)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a baking dish.
  2. Combine the cubed bread and raisins in a large bowl.
  3. Whisk together the milk, eggs, sugar, vanilla, cinnamon, nutmeg, and melted butter in another bowl.
  4. Pour the custard mixture over the bread and mix gently. Let it sit for 15 minutes to absorb.
  5. Pour the mixture into the prepared baking dish and bake for 45-50 minutes until golden and set in the middle.
  6. Combine the sugar and cream in a saucepan over medium heat for the whiskey sauce, stirring until dissolved. Add whiskey and bring to a simmer. Serve the pudding warm with whiskey sauce drizzled on top.
