A gluten-free Irish Apple Cake filled with tart apples and warm spices, perfect for any occasion.

  • 4-5 medium apples, peeled and sliced
  • 2 cups all-purpose gluten-free flour blend
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • Custard sauce (for serving)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. In a mixing bowl, combine flour, sugar, baking powder, baking soda, cinnamon, and nutmeg.
  3. In another bowl, cream together the butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in milk and vanilla.
  4. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the sliced apples.
  5. Pour the batter into the prepared cake pan and spread evenly.
  6. Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow the cake to cool slightly before serving.
  8. Serve warm with custard sauce.
