  • 2 cups all-purpose flour (certified gluten-free)
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1 cup currants or raisins (optional)
  • For Custard Sauce:
  • 2 cups milk
  • 4 egg yolks
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. Mix together the flour, sugar, baking powder, baking soda, salt, and cinnamon in a large bowl.
  3. Add the softened butter, eggs, vanilla extract, and milk to the dry ingredients; mix until well combined.
  4. Fold in the sliced apples and currants or raisins, if using.
  5. Pour the batter into the prepared pan and spread evenly.
  6. Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
  7. Prepare the custard sauce: In a saucepan, heat the milk over medium heat until steaming.
  8. Whisk together the egg yolks, sugar, and vanilla. Slowly whisk in the hot milk until combined.
  9. Return the mixture to the saucepan and heat gently, stirring until thickened. Do not boil.
  10. Serve the cake warm with custard sauce drizzled over the top.
