  • 1/4 cup honey
  • 2 limes (juiced)
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt and pepper (to taste)
  • 1 cup rice (uncooked)
  • 1 avocado (diced)
  • 1/2 cup cilantro (chopped)
  • 1/4 cup sour cream

Instructions

  1. Whisk together honey, lime juice, chili powder, cumin, salt, and pepper. Coat the chicken breasts in the marinade and let them sit for at least 30 minutes.
  2. Prepare 1 cup of rice according to package directions. Set aside to cool.
  3. Heat your grill or skillet over medium heat and cook the marinated chicken for about 6-7 minutes on each side until browned. Let rest before slicing.
  4. Combine in a large bowl the cooked rice, diced avocado, chopped cilantro, and sour cream. Fold until well mixed.
  5. Spoon the creamy avocado rice onto serving plates, top with sliced honey lime chicken, and drizzle extra lime juice over the top.
