High Protein Quiche (Gluten Free, High Protein)

A quick and nutritious quiche made with a burrito-sized tortilla as a base, filled with eggs, cottage cheese, and your favorite toppings.

Ingredients

  • 1 burrito-sized tortilla
  • 3 eggs
  • 1/4 cup cottage cheese
  • Shredded cheese (as much as you’d like, sprinkled on top)
  • 1 pinch salt
  • 1 pinch pepper

Instructions

  1. Preheat oven to 350°F and lightly spray a round quiche dish.
  2. Place a burrito-sized tortilla in the dish.
  3. Add eggs, cottage cheese, and your preferred toppings, salt, and pepper, and stir to combine.
  4. Top with some shredded cheese.
  5. Bake for 15-20 minutes until the edges are slightly golden and crispy.
  6. Let cool for a few minutes, slice, and enjoy!
