Hearty Blueberry Protein Muffins

A nourishing and delicious recipe for all that combines the goodness of blueberries with protein for a healthy snack.

  • 1 cup whole wheat flour
  • 1/2 cup protein powder
  • 1/2 cup rolled oats
  • 1/4 cup honey or maple syrup
  • 1/2 cup unsweetened applesauce
  • 1/2 cup almond milk
  • 1 cup fresh blueberries
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the whole wheat flour, protein powder, rolled oats, baking powder, baking soda, and salt.
  3. In another bowl, combine the honey (or maple syrup), applesauce, almond milk, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Gently fold in the fresh blueberries.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow to cool for a few minutes before transferring to a wire rack to cool completely.

Notes

  • For added sweetness, you can sprinkle a little sugar on top before baking.
  • These muffins can be stored in an airtight container for up to a week.
  • Feel free to substitute the blueberries with other fruits like raspberries or chopped bananas.
