- 1 cup whole wheat flour
- 1/2 cup protein powder
- 1/2 cup rolled oats
- 1/4 cup honey or maple syrup
- 1/2 cup unsweetened applesauce
- 1/2 cup almond milk
- 1 cup fresh blueberries
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp vanilla extract
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix together the whole wheat flour, protein powder, rolled oats, baking powder, baking soda, and salt.
- In another bowl, combine the honey (or maple syrup), applesauce, almond milk, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Gently fold in the fresh blueberries.
- Divide the batter evenly among the muffin cups.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool for a few minutes before transferring to a wire rack to cool completely.
