Healthy Vegan Date Cookies

Delicious and nutritious cookies made with almond flour and rolled oats, perfect for satisfying sweet cravings without guilt.

Ingredients

  • 1 cup almond flour
  • 1/2 cup rolled oats
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • Pinch of salt
  • Optional: dark chocolate chips or nuts

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine almond flour, rolled oats, baking soda, and salt.
  3. In another bowl, mix together the maple syrup, melted coconut oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until well combined.
  5. If desired, fold in dark chocolate chips or nuts.
  6. Scoop tablespoons of the cookie dough onto a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes or until golden brown.
  8. Allow to cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

Store in an airtight container for up to a week. For chewier cookies, consider chilling the dough for about 30 minutes before baking.
