Ingredients

  • 8 rice paper wrappers
  • 1 cup firm tofu, sliced
  • 1 cup mixed vegetables (carrots, bell peppers, cucumbers)
  • 1/2 cup fresh herbs (mint, cilantro)
  • 1 avocado, sliced
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon lime juice

Instructions

  1. Prepare all ingredients by slicing the tofu, vegetables, and avocado.
  2. Soak the rice paper wrappers in warm water until soft.
  3. Place a wrapper on a flat surface and layer with tofu, vegetables, herbs, and avocado.
  4. Drizzle with soy sauce, sesame oil, and lime juice.
  5. Fold the sides of the wrapper over the filling and roll tightly.
  6. Repeat with remaining wrappers and filling.
  7. Serve with dipping sauce of your choice.

Notes

  • For a spicier kick, add sliced jalapeños to the filling.
  • These spring rolls can be made ahead of time and stored in the refrigerator.
