A delicious and healthy version of the classic Starbucks coffee cake, made grain free with an option for dairy free.

Ingredients

  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup dairy free yogurt (optional)
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, mix the almond flour, coconut flour, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the maple syrup, melted coconut oil, eggs, and vanilla extract.
  4. Combine the wet and dry ingredients until well mixed.
  5. If using, fold in the dairy free yogurt and chopped nuts.
  6. Pour the batter into the prepared baking dish and smooth the top.
  7. Bake for 25-30 minutes or until a toothpick comes out clean.
  8. Let cool before slicing and serving.
