Healthy Pumpkin Oatmeal Bars

  • 1 cup rolled oats
  • 1/2 cup almond flour
  • 1 cup pumpkin puree
  • 1/4 cup honey or maple syrup
  • 1/4 cup unsweetened applesauce
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, combine rolled oats, almond flour, cinnamon, nutmeg, baking powder, and salt.
  3. Add pumpkin puree, honey or maple syrup, and applesauce to the dry ingredients and mix well.
  4. If using, fold in the chopped nuts.
  5. Pour the mixture into the prepared baking dish and spread evenly.
  6. Bake for 25-30 minutes or until a toothpick comes out clean.
  7. Allow to cool before cutting into bars.

Notes

  • Store in an airtight container for up to a week.
