- 1 cup rolled oats
- 1 cup pumpkin puree
- 1/2 cup honey or maple syrup
- 1/4 cup almond butter
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup chopped nuts (optional)
- 1/2 cup raisins or chocolate chips (optional)
- Preheat the oven to 350°F (175°C) and grease a baking dish.
- In a large bowl, combine the rolled oats, pumpkin puree, honey or maple syrup, and almond butter.
- Add the cinnamon, nutmeg, baking powder, and salt to the mixture and stir until well combined.
- If desired, fold in the chopped nuts and raisins or chocolate chips.
- Pour the mixture into the prepared baking dish and spread it evenly.
- Bake for 25-30 minutes or until the edges are golden brown.
- Allow to cool before cutting into bars.
