Ingredients

  • 1 cup rolled oats
  • 1 cup pumpkin puree
  • 1/2 cup honey or maple syrup
  • 1/4 cup almond butter
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chopped nuts (optional)
  • 1/2 cup raisins or chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, combine the rolled oats, pumpkin puree, honey or maple syrup, and almond butter.
  3. Add the cinnamon, nutmeg, baking powder, and salt to the mixture and stir until well combined.
  4. If desired, fold in the chopped nuts and raisins or chocolate chips.
  5. Pour the mixture into the prepared baking dish and spread it evenly.
  6. Bake for 25-30 minutes or until the edges are golden brown.
  7. Allow to cool before cutting into bars.
