  • 2 cups pumpkin puree
  • 1 cup cottage cheese
  • 1/2 cup oats
  • 1/4 cup honey or maple syrup
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine pumpkin puree, cottage cheese, oats, honey or maple syrup, eggs, and vanilla extract.
  3. Add in the cinnamon, nutmeg, baking powder, and salt, and mix until well combined.
  4. Pour the mixture into a greased baking dish.
