  • 1 cup pecans, chopped
  • 1 cup oats
  • 1/2 cup almond flour
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/4 cup honey

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix oats, almond flour, cinnamon, and salt.
  3. Add melted coconut oil and maple syrup to the dry ingredients and mix well.
  4. Press the mixture into a greased baking dish to form the base.
  5. In another bowl, whisk together eggs, honey, and vanilla extract.
  6. Stir in the chopped pecans and pour the mixture over the base.
  7. Bake for 25-30 minutes or until set and golden.
  8. Let cool before cutting into bars.
