Ingredients

  • 1 cup mixed dried fruits (raisins, cranberries, apricots)
  • 1 cup assorted nuts (almonds, walnuts, cashews)
  • 1 cup seeds (sunflower seeds, pumpkin seeds, chia seeds)
  • 1/2 cup natural nut butter (almond or peanut butter)
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine oats, dried fruits, nuts, and seeds.
  3. In a separate bowl, mix nut butter, honey (or maple syrup), vanilla extract, and salt until well combined.
  4. Pour the wet mixture into the dry mixture and stir until thoroughly combined.
  5. Scoop tablespoon-sized amounts onto the prepared baking sheet, flattening them slightly.
  6. Bake for 10-12 minutes or until golden brown.
  7. Allow to cool before removing from the baking sheet. Enjoy!

Notes

For sugar-free options, consider using stevia or monk fruit. Store cookies in an airtight container for up to a week.
