A delicious and nutritious treat that combines the zesty flavor of lemon with the sweetness of blueberries.

  • 1 cup fresh blueberries
  • ½ cup honey or maple syrup
  • ½ cup Greek yogurt
  • 2 large eggs
  • 1/3 cup coconut oil, melted
  • 1 lemon, juiced and zested
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a large bowl, mix together the flour, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the honey (or maple syrup), Greek yogurt, eggs, melted coconut oil, lemon juice, and lemon zest.
  4. Combine the wet and dry ingredients until just mixed, then gently fold in the blueberries.
  5. Pour the batter into the prepared cake pan and smooth the top.
  6. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
