Preheat the oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
In a mixing bowl, combine gluten-free oats, almond flour, melted coconut oil, honey or maple syrup, vanilla extract, and salt. Mix until well combined.
Press the mixture into the bottom of the prepared baking dish to form the crust.
In another bowl, mix together the chopped pecans, maple syrup, coconut sugar, cornstarch, and cinnamon.
Pour the pecan mixture over the crust and spread it evenly.
Bake for 25-30 minutes or until the top is golden brown.
Allow to cool completely before cutting into bars.
Notes
Store leftovers in an airtight container in the refrigerator.
These bars can be served warm or cold.
Feel free to add chocolate chips for an extra treat!
